Filled Red Peppers served with gorgeous rosemary roasted red potato wedges.

Recipe Ingredients for Roated Red Peppers

3 Red Peppers, halved
60 g Feta Cheese, cubed
12 Kalamata Olives, pitted
9 Cherry Tomatoes, halved
200 g Red Potatoes, cut into wedges
6 cloves garlic, skin-on and crushed
3 tsp Rosemary, leaves picked
8 tsp extra virgin olive oil

Recipe Directions for Roated Red Peppers

  1. Place Potatoes, Garlic and Rosemary in a roasting tray with 5 tsp oil.

  2. Place in oven for 35-40 minutes.

  3. Fill peppers with Cherry Tomatoes, Kalamata Olives and top with Feta Cheese and 1/2 tsp olive oil.

  4. Place in oven for 20 minutes.

  5. Enjoy!!
