Baked Zucchini and Yellow Squash. A great side dish to any protein!

Recipe Ingredients for Roasted Zucchini and Squash

1 medium Squash, Summer, Zucchini, Includes Skin
1 medium Squash, Summer, All Varieties
1 medium (2-1/2" dia) Onions
1 tsp Salt, Table
1 tsp Paprika
1 tsp Garlic Powder

Recipe Directions for Roasted Zucchini and Squash

  1. Preheat Oven to 375

  2. Wash vegetables

  3. Cut into even peices

  4. Slice onion, in quarters

  5. Make one solid layer in baking pan

  6. Sprinkle with Salt, Paprika and Garlic Powder

  7. Pour Vegetable Oil on top, and toss together to get a light even coating on all vegetables.

  8. Bake for approx. 40 min or until vegetables are tender.
