Roasted Zucchini Recipe

Easy dinner side to get in some fabulous vitamins. Very kid friendly!

Recipe Ingredients for Roasted Zucchini

3 lb zucchini, cut in half and then quartered lengthwise
2 tbsp. minced garlic
2 tbsp. olive oil
1 tsp. salt
1 tsp. black pepper
1 tsp. oregano
1 tsp. dried parsley

Recipe Directions for Roasted Zucchini

Place oven rack in the top slot in oven. Preheat oven to 450. Place all ingredients in a large bowl and toss to coat. Place zucchini skin side down on a baking sheet. Pour the remaining ingredients from the bottom of the bowl over the panned zucchini. Put zucchini in the oven on the top rack. Cook until browned. Approximately 7-10 minutes.
