Make ahead and add to starches, salads or as a veggie side - the roasting takes out some of the "wateriness" that zucchini can have when it is sauteed

Recipe Ingredients for Roasted Zucchini

4 pounds Squash, Summer, Zucchini, Includes Skin
3 tablespoons Olive Oil
1/2 tsp kosher salt

Recipe Directions for Roasted Zucchini

  1. cut zucchini lenghthwise into quarters

  2. then cut into about 1/3" cubes

  3. add to large roasting pan for about one layer

  4. roast at 45 for abut one hour - stirring as needed to brown evenly
