any vegetable can be roasted with this dressing

Recipe Ingredients for Roasted Zucchini with cheese

2 large zucchinis, sliced
2 cloves garlic, crushed
1 1/2 tsp mustard
2 T vegetable oil
1 T white wine
1 T red wine vinegar
1/2 tsp salt
1/2 tsp pepper
1 tsp dried thyme
3/4 T Parmesan cheese
1 T swiss cheese

Recipe Directions for Roasted Zucchini with cheese

  1. Preheat oven on high (375 or 400)

  2. place sliced zucchinis in pan

  3. mix remaining ingredients (except cheeses)

  4. pour mixture over zucchini and toss till well coated

  5. sprinkle evenly with cheeses

  6. Roast in oven for 25-30 min
