Recipe Ingredients for Roasted yellow pepper soup

6 yellow bell peppers
4 tbsp butter
1 cup chopped onions
1 cup chopped leeks
1/2 tsp salt
1/2 tsp pepper
1 small potato
6 cups fat free chicken broth

Recipe Directions for Roasted yellow pepper soup

  1. Lay 6 pepper halves, cut-side down on a baking sheet; broil until well charred, 5-10 minutes (or more). Transfer to a plastic bag; seal for 10 minutes. Slip off and discard skins. Coarsely chop roasted peppers, set aside.

  2. Melt butter in a soup pot. Add onions, leeks, salt, and pepper; saute over low heat about 10-15 minutes or until veggies are soft.

  3. Coarsely chop remaining 6 pepper halves; add to pot with potatoes, reserved roasted peppers, and 5 cups broth. Simmer, uncovered, until veggies are tender, about 30 minutes. Cool to room temp.

  4. Puree in food processor, add a bit more broth if too thick. Chill and serve or serve hot. Garnish with chives if desired.
