Recipe Ingredients for Roasted yellow pepper soup

1 tbsp olive oil
3/4 cup carrots, chopped
1/4 cup yellow onion, chopped
4 yellow peppers, roasted and chopped
12 oz vegetable stock
1 tsp black pepper
1 tsp sea salt
2 oz greek yogurt, garnish

Recipe Directions for Roasted yellow pepper soup

  1. Roast peppers under broiler till skin is charred.

  2. Peal skin off and slice into strips

  3. Saute onion and carrots in olive oil.

  4. Add peppers, salt and pepper.

  5. Add vegetable stock and bring to a boil.

  6. Turn to low and simmer for 20 minutes.

  7. In a blender, pulse till smoth.

  8. Garnish with non fat greek yogurt
