Roasted yellow pepper with bulgur

Recipe Ingredients for Roasted Yellow Pepper with Bulgur

2 yellow peppers
1/2 cup bulgur
1/2 cup mushrooms
1/3 cup red peppers
1/4 c tomato
3/4 cup zucchini
2 asparagus spears
1 cup chopped spinach
2 tbls feta cheese
1 clove garlic
1 tbls olive oil

Recipe Directions for Roasted Yellow Pepper with Bulgur

  1. roast bell pepper for 15 minutes at 400.

  2. presoak 1/4 cup bulgur in 1/4 cup water.

  3. saute tomato, garlic and red pepper in 1 tbls olive oil for one minute.

  4. add mushrooms, zucchini, and asparagus and saute for two minutes.

  5. add bulgur and cook 2 more minutes.

  6. add chopped spinach and cook till soft.

  7. stuff bell peppers with mixture and top with one tablespoon of feta cheese.

  8. Bake for additional 10 minutes.
