You can substitute any root veggies you like. The only things to watch in this recipe are the potatoes and the butter if you want to keep the calories low. Otherwise, play around with the measurements and use whatever you like! Beautiful color and so yummy. **I apologize for the mixed units!**

Recipe Ingredients for Roasted Winter Veggies with Honey Mustard Butter

300 g red beets, about 4 beets, quartered
3 carrots, quartered
2 potatoes, quartered
1/2 rutabaga, 1.5 inch chunks
1 large sweet potato
3 cloves garlic, unpeeled
1 red onion, peeled, quartered
1 1/2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tbsp thyme
1 tbsp rosemary
1 tbsp butter
1 tbsp honey
1 tbsp mustard, quality coarse ground, heaping

Recipe Directions for Roasted Winter Veggies with Honey Mustard Butter

  1. Wash, peel, and cut p the veggies into equal sized chunks. I recommend about 1.5 inch chunks.

  2. Layer in a baking dish, starting at the bottom, red beets, carrots, rutabaga, celery root, and potatoes.

  3. At the top, wedge in the UNPEELED garlic cloves, and peeled and quartered red onion. Sprinkle on herbs, dried or fresh, and then drizzle with olive oil.

  4. Top with salt and black pepper to taste. Place in 175C (~350F) oven for about 25-30 minutes, or until veggies are soft but firm and crispy, golden on the edges. (Cooking time varies on oven. I use convection for shorter cooking times.)

  5. In a bowl, combine and mix honey, mustard, and butter.

  6. Serve hot roasted veggies and top with desired amount of the honey-mustard-butter mix. Enjoy!
