Recipe Ingredients for Roasted Winter Vegetables

685 g acorn squash
194 g shallot
41 g garlic
430 g turnips
288 g parsnips
40 g olive oil
1/8 t salt
1 T thyme

Recipe Directions for Roasted Winter Vegetables

  1. Peel squash and turnips and cut into 1 inch pieces. Peel parsnips and cut in half lengthwise (quarter if larger). Halve shallots. Separate the cloves from one head of garlic.

  2. Toss vegetables with oil, salt, pepper, and thyme.

  3. Bake at 400 until tender, about 30-35 minutes.
