Recipe Ingredients for Roasted Wild Salmon with Tomatoes, Basil, and Capers, Parmesan-Crusted Cauliflower, and Rice

1 Cooking spray
20 ounces salmon fillets(4-5oz.)
1 Salt
1 black pepper, freshly ground
2 tablespoons lemon herb seasoning
4 cups cauliflower florets
3 tablespoons grated parmesan cheese
1 cup tomatoes(fresh Roma (plum)),chopped
1/4 cup basil leaves(fresh), slivered
2 tablespoons capers,drained
1 cup instant brown rice, cooked according to package directions

Recipe Directions for Roasted Wild Salmon with Tomatoes, Basil, and Capers, Parmesan-Crusted Cauliflower, and Rice

  1. Preheat oven to 400 degrees F.

  2. Coat a large baking sheet with cooking spray.

  3. Season salmon with salt and pepper.

  4. Brush lemon and herb seasoning all over both sides of salmon.

  5. Place salmon on prepared baking sheet.

  6. Arrange cauliflower on another baking sheet, spray with cooking spray and sprinkle with Parmesan.

  7. Roast 15 minutes, until fish is fork tender and cauliflower is golden brown and tender.

  8. In a medium bowl, combine tomatoes, basil and capers. Season, to taste, with salt and pepper.

  9. Serve the salmon fillets with tomato mixture spooned over top.
