Delicious garlicky cauliflower, suitable for taking to potlucks. Easy preparation, low in calories. From Chicago Tribune many years ago.

Recipe Ingredients for Roasted whole cauliflower

1 cauliflower head, about 2.5 pounds
3 T extra-virgin olive oil
2 t garlic, minced
1 t mustard seeds
1/2 t salt
1/4 t pepper

Recipe Directions for Roasted whole cauliflower

  1. Put rack in center of oven; set oven at 375F. Set aside a baking sheet and a square of heavy-duty tin foil to fit under cauliflower.

  2. Trim cauliflower leaves. Turn head over, carefully cut down about 1.5 inches to remove woody stem, making sure that florets stay intact. Rinse cauliflower; blot dry with paper towels. Place cauliflower in center of foil; set on baking sheet.

  3. Combine oil and garlic. Gently warm on top of stove or in microwave oven until fragrant, but garlic should not brown. Strain oil through fine sieve, pressing on garlic to get all oil. Discard garlic. Stir mustard seeds and pepper into oil.

  4. Spoon warm oil mixture as evenly as possible over cauliflower. Sprinkle evenly with salt. Crimp foil to hug base of cauliflower.

  5. Bake, uncovered, until just tender (test center core with tip of sharp paring knife), about 1 1/2 hours. Can be made a day ahead, cooled and refrigerated, wrapped airtight. Let come to room temperature before using. Place in dish that can go in microwave. Reheat in microwave oven on high power (100 percent) until hot, about 4-6 minutes.

  6. To serve, place head in center of round platter layered with kale leaves. Sprinkle with parsley or chives. Serve hot in pie-shaped wedges, garnished with lemon wedge.
