can be served over pasta too, and any veggies can be substituted.

Recipe Ingredients for roasted veggies and rice

2 cups wild rice
1 cup tomato sauce
1/2 eggplant
1 red bell pepper
1/2 cup mushrooms
8 cloves garlic
1/2 yellow onion
2 tbsp parmesan cheese
1 tsp cayenne pepper
2 tsps paprika

Recipe Directions for roasted veggies and rice

  1. cut veggies into bite sized pieces.

  2. Place in baking dish, cover with foil, and heat in oven at 450 degrees for 35 or so minutes

  3. cook rice separately according to directions

  4. spoon veggies over rice and top with tomato sauce plus spices

  5. garnish with cheese.
