White potato, sweet potato, onion, butternut, red pepper, oil, vinegar

Recipe Ingredients for Roasted veggies

10 oz russet potatoes
16 oz sweet potato
9 oz onion
1 lb butternut squash
6 oz red pepper
12 oz eggplant
2 tbls olive oil
2 tbls Rosemary and Balsamic Vinegar
1 tbls Thyme

Recipe Directions for Roasted veggies

  1. Chop all veggies

  2. put in shallow roasting pan

  3. sprinkle with oil, vinegar, thyme

  4. bake at 400
