Beautiful vegetables roasted to perfection

Recipe Ingredients for Roasted Veggies

1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 medium Squash, Summer, Zucchini, Includes Skin
2 clove Garlic
1 tbsp Olive Oil
1 tsp, ground Basil, Dried

Recipe Directions for Roasted Veggies

Chop all veggies and place in bowl. Sprinkle oil, herbs, and garlic. Pour onto baking sheet and roast at 200 degrees until slightly charred!
