This dish is great as a side with chicken, fish, pork, or beef! It is a very healthy low calorie veggie dish that is very easy to make.

Recipe Ingredients for Roasted Veggies

1 cup, sliced Squash, Summer, Crookneck And Straightneck
1 cup, sliced Squash, Summer, Crookneck And Straightneck
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 slice, large (1/4" thick) Onions
1 tbsp Dill Weed, Dried
1 serving Extra Virgin Olive Oil
1 serving Extra Virgin Olive Oil
1 cup Cauliflower
1 cup Cauliflower
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 serving Table Blend Salt Free Seasoning Blend

Recipe Directions for Roasted Veggies

Chop all veggies and place in a large baking dish. Drizzle 1-2 TBSP extra virgin olive oil on veggies, and then sprinkle dill, Mrs. Dash, and salt. Toss to coat all veggies. Cover with foil and bake in a 375 degree oven for 35 minutes. Sprinkle with parmesan cheese if desired when serving.
