This goes great with ANYTHING and EVERYTHING!! Even tossed in pasta with some grated Italian cheese. Might want to add a little more olive oil...

Recipe Ingredients for Roasted Veggies

8 cherry tomatoes
1/2 cup cauliflower
3 brussels sprouts
2 cloves garlic
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Roasted Veggies

  1. (Add 1/2 cup brocolli flowerettes for an additional 10 calories.)

  2. Combine all ingredience in a large bowl. Spread on a large cookie sheet and roast for about 20 minutes in 425 oven or until all veggies are tender.

  3. Can add flaked red pepper for a spicey dish!
