veggies and olive oil...yum I've never really measured what I put it so these are guessestiments. The salt might be too high

Recipe Ingredients for Roasted Veggies

3 tbsp olive oil
3 cups zucchini
3 cups yellow squash
1 cup mushrooms, quartered
1 1/2 tsp salt
1 tsp pepper

Recipe Directions for Roasted Veggies

  1. cut veggies

  2. toss with oive oil, salt and pepper

  3. bake at 400 until done - about 15 minutes depeding on how you like them
