Recipe Ingredients for roasted veggies

1 large sweet potato, diced
1 medium zucchini, sliced
3 scallions, sliced
1 medium carrot, sliced
1 tbs sesame oil

Recipe Directions for roasted veggies

  1. preheat oven to 450

  2. toss veggies in oil and whatever spices you choose (cumin and garlic are perfect in this)

  3. bake 20 mins or to your liking
