Roasted Veggies with Balsamic Vinegar

Recipe Ingredients for Roasted Veggies

2 c broccoli
2 tbsp olive oil
3 tbsp balsamic vinegar
2 c asparagus
1/2 large onion
15 grape tomatoes

Recipe Directions for Roasted Veggies

  1. preheat oven to 375 degrees F

  2. cut up veggies

  3. place in shallow baking dish uncovered

  4. drizzle olive oil and vinegar over veggies

  5. add additional seasoning as desired

  6. bake for 20-25 minutes or until veggies are tender
