Perfect for a side dish anytime of the year, I prefer it in the winter!

Recipe Ingredients for Roasted Veggies

1 cup mushrooms, chopped
2 cups zucchini, chopped
2 3/4 cup butternut squash, chopped
1 tbsp extra virgin olive oil
1/2 tsp pepper
1/4 tsp salt

Recipe Directions for Roasted Veggies

  1. Pre-heat oven to 400 degrees.

  2. Chop veggies and empty into a bowl.

  3. Drizzle olive oil and salt and pepper over and toss to coat.

  4. Spread evenly onto a baking sheet and put in oven.

  5. Turn after approximately 10 min and continue to roast.

  6. Check after about 10 min and turn again if necessary!
