oven roasted squash, eggplant, oinions, mushrooms, tomatoes, and cabbage

Recipe Ingredients for Roasted Veggies

316 g squash
266 g zuchini
351 g eggplant
250 g cremini mushrooms
215 g onion
167 g carrots
100 g red pepper
225 g grape tomatoes
242 g purple cabbage
7 g garlic
1 tbsp fresh oregano
1 tbsp fresh rosemary
1 tbsp fresh basil
15 g olive oil

Recipe Directions for Roasted Veggies

  1. wash and slice veggies

  2. place on greased cookie sheet

  3. sprinkle herbs and oil over and toss

  4. add tomatoes and cabbage at the end

  5. bake at 400 about 20 minutes

  6. serving = 300
