Recipe Ingredients for Roasted veggies

2 small zucchini
1 medium yellow onion
1 orange bell pepper
2 tbsp extra virgin olive oil
2 pinch salt
1 clove garlic
1/2 tsp dried parsley
1 tsp lemon juice

Recipe Directions for Roasted veggies

  1. cut veggies

  2. season zucchini, onion & bell pepper with the rest of ingredients.

  3. roast in oven until desired consistency
