Roasted Veggies with coconut oil and saffron

Recipe Ingredients for Roasted Veggies

1 large Sweetpotato
1 parsnip (9" long) Parsnips
2 carrot (7-1/2") Carrots
127 1/2 grams Parsley Root
2 tbsp Extra Virgin Coconut Oil

Recipe Directions for Roasted Veggies

  1. Cut all veggies into equal sized pieces.

  2. Roast with a half cup of water until tender.

  3. Add coconut oil and roast until the outside is crisp.

  4. Add saffron and spices to liking.
