Recipe Ingredients for Roasted Veggies and Penne

2 zucchini, diced
16 ounces penne pasta, boiled and drained
2 carrots, diced
1 onion, diced
6 mushrooms, diced
1 red pepper, diced
3/4 cup frozen green peas
1/2 pound italian sausage, drained and rinsed
1 cup mozzarella cheese, shredded
1/8 cup parmesan cheese, shredded
3 cups pasta sauce
2 tablespoons olive oil

Recipe Directions for Roasted Veggies and Penne

  1. toss veggies, excluding frozen peas, lightly in olive oil

  2. Roast in 450 degree oven for 15 minutes

  3. Boil penne for 6 minutes and drain

  4. Brown sausage and drain and rinse

  5. Combine veggies, penne, sausage, cheese, frozen peas and pasta sauce. Sprinkle some cheese on top. Cover with foil and bake for another 15 minutes. Remove foil and let cheese brown for another ten minutes. Enjoy!
