Recipe Ingredients for Roasted Veggies with Parmesan cheese

11 1/2 grams Carrots
24 4/5 grams Eggplant
56 7/10 grams Mushrooms
33 3/5 grams Yellow Onions (Grilled)
9 2/5 grams Celery
1 tbsp Soy Sauce
4 tbsp Parmesan, Grated Cheese
1 tbsp Extra Virgin Olive Oil
0.5 cup, chopped Peppers, Sweet, Green

Recipe Directions for Roasted Veggies with Parmesan cheese

Prepare vegetables and place in a large casserole dish, pour olive oil over vegetables, (if using dried basil, add now. Sprinkle with salt and pepper if desired, and stir. Cover and roast in 350 degree oven for one hour until vegetables are tender! If using fresh basil add now. Remove from oven and sprinkle with parmesan cheese and cover again. Allow cheese to melt.
