Roasted veggies in marinara meat sauce over quinoa.

Recipe Ingredients for Roasted Veggies in marinara sauce over quinoa

1 cup red quinoa
2 cups Ragu Sauce
4 oz Lean ground beef
4 cups eggplant
4 cups summer squash 2 green/2 yellow
1 tablespoon Olive Oil or pan spray
1/2 cup Parmesan Cheese

Recipe Directions for Roasted Veggies in marinara sauce over quinoa

  1. cut veggies into strips then into 3 inch pieces

  2. brush with olive oil

  3. roast in panini grill

  4. cook quinoa as per box instructions

  5. cook and drain meat, mix with sauce

  6. layer quinoa, veggies, sauce and cheese

  7. microwave to warm and melt cheese or put under broiler in oven for 10 minutes on 400 (check often)
