delicious roasted veggies loaded with fiber and great to top on nearly anything like brown rice, pasta or even make veggie enchiladas

Recipe Ingredients for Roasted Veggies COLE

1 cup, chopped Cabbage, Red
5 clove Garlic
1 large Onions, Spring Or Scallions
5 medium Mushrooms
0.5 large Squash, Summer, Zucchini, Includes Skin
0.75 medium Carrots
4 1tsp Olive Oil
3 oz Soy Sauce
2 tsp Cayenne
3 dash Pepper, Black

Recipe Directions for Roasted Veggies COLE

chop all veggies to desired size. I like my onions to be cut larger, and the mushrooms to be thick so the flavor really soaks in. Throw chopped veggies onto a flat pan, toss will oil, soy sauce and spices then bake at 300 for about 45+mins.
