assorted veggies, roasted with balsamc vinegar, and olive oil, salt, & pepper

Recipe Ingredients for roasted veggies balsamic

1 medium Eggplant
1 (85g) Mushrooms Portabella Caps
3/4 (145 g) baby carrots
120 g asparagus
1/2 large red onion
3 tablespoons olive oil
2 oz balsamic vinegar
1/2 teaspoon salt

Recipe Directions for roasted veggies balsamic

  1. take clean, dried veggies and place in a bag with olive oil, balsamic vinegar, salt & pepper to taste. Coat, then lay out on a cookie sheet.

  2. place in a pre-heated 405 degree oven for about 15-20 minutes.
