Recipe Ingredients for roasted veggie wraps

1/4 c water
1 tbs olive oil
1/8 cup cider vinegar
1/8 c light ranch dressing
1 medium sweet pepper (sliced)
1 cup carrots, sliced thin
1 c sliced mushrooms
1 c broccoli
1 medium onion
1 yellow squash
1 c low fat cheddar cheese

Recipe Directions for roasted veggie wraps

  1. combine dressing, water, oil, and vinegar. Place vegetables in a bowl. Drizzle with dressing and toss to coat. Spread veggies on two baking pans coated with non stick spray. Bake, uncovered at 425 for 20-25 minutes, or until tender, stirring occasionally.

  2. Spoon about 3/4 cup onto center of each tortilla. Sprinkle with cheese. Broil 4-6 inches from heat for 2 minutes, or until cheese is melted. Fold. Serve with salsa if desired.
