Roasted Veggie Soup Recipe

I used leftover rice, roasted veggies, kale and collards to make this dish.

Recipe Ingredients for Roasted Veggie soup

3 cup chopped raw Grape Tomatoes
4 stalk, medium (7-1/2" - 8" long) Celery
2 medium (2-1/2" dia) Onions
6 small Squash, Summer, Zucchini, Includes Skin
2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 tbsp Vegetable Oil, Canola
2 tsp Kosher Salt
0.5 tsp Pepper, Black
0.5 cup, chopped Kale
0.5 cup, chopped Collards
1 tbsp Vinegar Balsamic
1 tbsp Lemon Juice, Canned Or Bottled
1 cup Rice, Brown, Medium-grain, Cooked
1.5 cup Beans, Kidney, Red, Mature Seeds, Canned
7 cup (8 fl oz) Water

Recipe Directions for Roasted Veggie soup

  1. Roast veggies with onion, salt and pepper.

  2. Boil collards and kale about 3 min. Drain. Add lemon juice and balsamic vinegar; mix well.

  3. Combine all in large pot with water and canned (drained and rinsed) beans.

  4. Simmer for 1 hour.

  5. Top with parmesan cheese if desired.
