roasted veggies with hummus and feta!!!

Recipe Ingredients for roasted veggie salad

1 cup asparagus
2/3 cup white onion
1 cup white mushroom
2 cups spinach
1 tablespoon balsamic vinegar
1/4 cup carrot
1 tablespoon feta
1 tablespoon hummus
1 whole wheat pita

Recipe Directions for roasted veggie salad

  1. Roast the onion, mushrom and asparagus in a 400 degree oven for 15 minutes.

  2. Chop spinach and carrot and mix.

  3. Add roasted veggies.

  4. Add hummus, balsamic, and feta on top of salad.

  5. Toast 1 whole wheat pita and cut into strips. Add to side of salad.
