Summer vegetables and herbs make this whole wheat pasta salad delicious for bbqs.

Recipe Ingredients for Roasted Veggie Pasta Salad

1 zucchini
2 summer squash
1 large onion
5 roma tomatoes
1 pound whole wheat pasta
1/2 bottle kens light balsamic dressing
2 tbsp pine nuts
1/4 cup parsley
1/2 cup basil
2 tbsp olive oil
6 ounces mozzarella cheese

Recipe Directions for Roasted Veggie Pasta Salad

  1. Cook pasta according to box. Drain and add a little dressing and set aside.

  2. Slice zucchini, summer squash and onion. Toss with olive oil and salt and pepper. Roast in oven at 425 degrees for about 25 minutes. Do the same with tomatoes.

  3. Chop mozzarella into cubes.

  4. Toast pine nuts until fragrant.

  5. Chop basil and parsley.

  6. Add all ingredients to the noodles and add remaining dressing.

  7. Serve cold.
