Recipe Ingredients for roasted veggie pasta

2 1/2 cups sweet potatoes, diced
1 cup cherry tomatoes
3 cups asparagus
4 tbl extra virgin olive oil
2 cups sugar snap peas, frozen
2 cups chopped spinach, frozen
7 oz whole wheat pasta
1 tsp salt
1 tsp oregano
1 tbl basil (fresh)
1 Garlic Salt to taste

Recipe Directions for roasted veggie pasta

  1. Wash, peel and dice two large sweet potatoes

  2. Coat with 1 tbl EVOO, Kosher or Sea Salt and Pepper to taste (I use about 1 tsp of each)

  3. Place coated sweet potatoes in roast pan and roast at 400 degrees for about 30 minutes (depending on your desired texture cook less or more)

  4. In the meantime, boil your choice shape whole wheat pasta, omit fat, but do salt the water for flavor

  5. Wash, Trim, and cut asparagus into 3 inch peices

  6. Mix asparagus, tomatoes, and 1 tbl EVOO, and 1 tsp salt and pepper.

  7. About fifteen minutes before the sweet potatoes have reached their desired texture, add asparagas mixture to roasting pan and continue to roast until tomotoes have wilted slightly.

  8. 5 minutes before pasta is done, add frozen snap peas, and drain once peas are floating

  9. Microwave chopped spinach for about 3 minutes

  10. Mix all vegtables, pasta and last tbl EVOO together, with either dried or fresh herbs, garlic salt and pepper to taste.
