Recipe Ingredients for Roasted Veggie Cous Cous Salad with Chicken

10 oz dry CousCous
16 oz broccoli
8 oz water chestnuts
12 1/2 oz chicken
12 oz Frozen Mixed Pepper Strips
1 medium onion
10 oz Original Diced Tomatoes and Green Chilies
16 oz chicken broth
1 oz lemon juice
1 salt and pepper

Recipe Directions for Roasted Veggie Cous Cous Salad with Chicken

Open box and pour into a bowl. Add tomatoes with juice, chicken broth and lemon juice then set aside. Cous cous will absorb the liquid, plump and soften. In a skillet, heat 1 Tbsp olive oil and saute sliced onions, broccoli and peppers. Cook for 10 minutes, stirring well. Add chicken, chestnuts and seasonings. Stir in cous cous. Serve at room temperature or chilled. Good even if you omit the chicken and use vegetable stock for the vegetarians out there. Just add garlic and dill for extra flavor.
