Recipe Ingredients for roasted veggie and chicken salad

500 g chicken breasts, uncooked
470 g potato
1 (205g) sweet potato
3/4 cup parsnips, sliced
1 large red pepper
1 large onion, diced
1 medium zuccini
3 cloves garlic
1 pint cherry tomatoes
2 tbsp lemon juice
2 tbsp fresh rosemary
1/8 tsp salt
1 pepper to taste

Recipe Directions for roasted veggie and chicken salad

  1. Preheat oven to 400

  2. Spray one large roasting dish, and one cookie sheet with low cal or O Kcal cooking spray

  3. In roasting pan, place chopped onion, chopped red pepper, chopped zuccini, garlic, lemon juice, rosemary and chicken.

  4. On cookie sheet, place chopped potato and sweet potato.

  5. Put both cookie sheet and roasting pan in oven, and cook for 20 minutes, then removed from oven, stir veggies and flip potatoes. At this point, add the mushrooms to the veggie roasting pan. Return both to oven.

  6. After 10 additional minutes of cooking, remove the cookie sheet and add pint of grape or cherry tomatoes to cookie sheet. Return to oven for final 15 minutes of cooking.

  7. Both roasting pan and cookie sheet should cook for a total of 45 minutes.

  8. Remove from oven, combine veggies and potatoes and serve hot.
