Vegetarian version of baked penne.

Recipe Ingredients for Roasted Veggie Baked Penne

0.5 medium (2-1/2" dia) Onions
2 cup slices Squash, Summer, Zucchini, Includes Skin
3 cup, chopped Peppers, Sweet, Red
3 tbsp Parmesan, Grated Cheese
2 cup (1" cubes) Eggplant

Recipe Directions for Roasted Veggie Baked Penne

Dice and roast all veggies in the oven at 425 for 25 minutes. Dice sausage and roast for 12 minutes until crispy. Cook penne according to instructions. Then combine penne, sausage, veggies and marinara in bowl. Transfer to baking dish and sprinkle cheese on top. Bake in a 375 oven for 25 minutes.
