1 large Onions
1 tbsp Oil Olive Extra Virgin
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Roasted Vegetables Recipe

  1. Ingredients:

  2. 1 medium zucchini, cut into bite-size pieces

  3. 1 medium yellow summer squash, cut into bite-size pieces

  4. 1 medium red bell pepper, cut into bite-size pieces

  5. 1 medium yellow bell pepper, cut into bite-size pieces

  6. 1 pound fresh asparagus, cut into bite-size pieces

  7. 1 red onion, chopped

  8. 1 Tbsp extra virgin olive oil

  9. 1 tsp salt

  10. 1/2 tsp black pepper

  11. Preparation:

  12. Preheat the oven to 450 degrees F. Place the zucchini, squash, bell peppers, asparagus, and red onion in a large roasting pan, and toss with the olive oil, salt, and black pepper. Spread in a single layer.

  13. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.
