Recipe Ingredients for Roasted Vegetables

1 pound asparagus
1/2 lb carrots
2 lbs portabella mushrooms
1 onion
2 cloves garlic
1 salt and pepper to taste
1/2 cup olive oil

Recipe Directions for Roasted Vegetables

  1. Cut carrots lengthwise into smaller pieces.

  2. Trim asparagus, then cut into thirds.

  3. Cut onion into medium size chunks.

  4. Cut portabella mushrooms into quarters.

  5. Slice the garlic cloves into small slices.

  6. Preheat oven to 450 degrees.

  7. Bring a large pot of water to a boil. Add onion, boil for 2 minutes. Add carrots, boil for an add'l 2 minutes. Add asparagus, boil for an add't 2 minutes. Drain, then quickly spread out on a cookie sheet and place in the fridge for 10 minutes to retain color and to cool.

  8. Meanwhile, saute mushrooms in a large cast iron skillet in 1/4 cup of oil, adding salt and pepper to taste. Set aside. Add more oil if needed, then add the onion and carrot. Saute for about five minutes until carmelized. Add asparagus, suteeing for another 3 minutes. Add mushroom then garlic and saute a minute or two more. Once everything is in the skillet, place the skillet in the oven on the middle rack. Roast the vegetables for 20 minutes. Serve immediately.
