Simple Roasted Vegetables If you like more flavor, you can douse them with low calorie Italian or balsamic vinegar dressing, or garlic, pepper, and a bit of salt before roasting. Makes a lot, so you will probably need at least a couple of cookie sheet s to make these. Sweet onions work best if you have them available.

Recipe Ingredients for Roasted Vegetables

2 medium zucchini
2 medium red pepper
2 yellow pepper
1 eggplant
2 medium onion

Recipe Directions for Roasted Vegetables

  1. Prepare eggplant by slicing then either salting for 20 minutes and rinsing/squeezing or zapping in microwave to tenderize a bit then squeeze. (makes a bit less bitter)

  2. Cut the vegetables

  3. Place all the veggies in single layer in foil-lined cookie sheets or shallow pan(s)

  4. Roast at 400 degrees for about 20 minutes or until they are done the way you like them. (I like the onions to take on just a bit of char at the edge)
