Roasted vegetables w/ Olive oil & spices

Recipe Ingredients for Roasted Vegetables

10 baby carrots
5 potato medium (2-1/4" to 3-1/4" dia) Potatoes, White, Flesh And Skin
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1/2 medium (2-1/2" dia) Onions

Recipe Directions for Roasted Vegetables

Cut up vegetables and place in 13x9 baking pan. Sprinkle with olive oil and herb/spice mix. Bake uncovered at 425 for 1 hour. Stir half way through cooking time.
