Homemade Oven Roasted Vegetables

Recipe Ingredients for Roasted Vegetables

1 squash (4 inch dia) Squash, Winter, Acorn
1 cup, sliced Fennel, Bulb
1 cup, chopped Onions
2 cup Cauliflower

Recipe Directions for Roasted Vegetables

  1. Peel squash, fennel & onion. Cut into 3/4 inch pieces.

  2. Cut cauliflower into 1 1/2 inch florets.

  3. Toss all vegetables in 1 oz Olive Oil. Place in roasting pan.

  4. Place in 375 degree oven and roast for until tender.
