Recipe Ingredients for Roasted Vegetables

582 g sliced Squash, Summer, All Varieties
250 g cremini Mushrooms
245 g chopped Cabbage, Red
225 g raw Grape Tomatoes
157 g carrots
100 g chopped Peppers, Sweet, Red
157 g chopped Red Onion
10 g Garlic
1 tbsp Rosemary, Fresh
1/8 cup leaves, whole Basil, Fresh
15 g Olive Oil

Recipe Directions for Roasted Vegetables

  1. combine all veggies except tomatoes and red cabbage. toss in large bowl with herbs and olive oil.

  2. roast 20 min at 400

  3. add tomatoes and cabbage. roast another 10 min until veggies are done.

  4. serving = 235 g
