Roasted vegetables, good by themselves or on a sandwich.

Recipe Ingredients for Roasted Vegetables

1 Eggplant
2 medium tomatoes
1 zucchini
2 cloves garlic
1/2 cup onion
1 yellow pepper
6 tablespoon olive oil

Recipe Directions for Roasted Vegetables

  1. Chop vegetables into bite size pieces.

  2. Mix everything but tomato with with olive oil. Set tomato aside.

  3. Grill on a George Foreman or similar grill for 4 minutes. On small grill the vegetables may need to be divided and grilled in several sets.

  4. Mix in tomatoe.

  5. For a great sandwich add provolone and fresh basil.
