Recipe Ingredients for Roasted Vegetables

1 eggplant
2 zuchinni
2 red bell peppers
2 green bell peppers
2 onions
1 lb asparagus
10 oz mushrooms
1/3 cup olive oil

Recipe Directions for Roasted Vegetables

  1. cut up each vegetable into bite size pieces around the same size.

  2. drizzle olive oil over vegetables and toss with your hands so every piece is coated.

  3. salt and pepper to taste.

  4. roast at 400 for 20-40 minutes to desired doneness, stirring a few times in between.
