Recipe Ingredients for roasted vegetables

1 zucchini
1 yellow zucchini
1 red bell pepper
1 yellow bell pepper
1 lb asparagus
1 cup of red onion
4 T. extra virgin olive oil
1/4 tsp. salt
1/2 tsp. black pepper

Recipe Directions for roasted vegetables

  1. heat oven to 450 degrees

  2. slice all vegetables into bite size pieces. toss with extra virgin olive oil and seasoning. layer in a roasting pan and bake for 30 minutes. stirring occassionally to roast evenly and distribute flavor. serve warm!
