A Thanksgiving staple in our house, but makes a good autumn meal anytime.

Recipe Ingredients for Roasted vegetables

1 1/2 sweet potato
2 cups yam
1/2 stalks broccoli
1/2 head cauliflower
2 tbsp olive oil
2 tsp sage
2 tsp thyme
2 tsp rosemary
1/2 tsp salt

Recipe Directions for Roasted vegetables

  1. 1. Chop all ingredients into bite-sized pieces.

  2. 2. Add oil and herbs to vegetables and toss well to coat everything.

  3. 3. Put in a single layer in a large baking pan.

  4. 4. Roast in a 450 degree oven for 15-20 minutes or until pieces are tender.
