Coat vegetables with olive oil and herbs/spice of choosing.

Recipe Ingredients for Roasted vegetables

4 red potatoes
1 sweet potato
4 carrots
1 tbsp olive oil

Recipe Directions for Roasted vegetables

Wash and cut all vegetables. Peel sweet potato. Put them in a large bowl and drizzle on oil. Add spices and/or herbs. Toss gently. Put into foil-lined baking pan. Bake for 1 hour on 400 degrees.
