Roasted vegetables add a great depth of flavor to any meal. This low sodium, low cal, low fat version will please the whole family.

Recipe Ingredients for Roasted Vegetables

2 cups red potato, cubed
2 cups zucchini, cubed
2 red bell peppers, coarsely chopped
1 cup eggplant, cubed
2 red onions, cut in 2" chunks
2 cups sweet potatoes, cut in 2" chunks
2 carrots, cut in 2" chunks
1/4 teaspoon kosher salt, course
1/2 teaspoon red pepper flakes
1/2 teaspoon black pepper
1 teaspoon herbs, dried Italian mixed
2 garlic cloves, sliced

Recipe Directions for Roasted Vegetables

  1. Heat oven to 400 degrees F. Spray cookie sheet with cooking spray. Mix all ingredients in a large bowl and place evenly on cookie sheet so they cook evenly.

  2. Bake for about 45 minutes or until the potatoes are fork tender.

  3. Remove from oven and place on a serving platter. Garnish with your favorite fresh herbs and serve. Enjoy!
