Roasted Veggies that are great with pasta

Recipe Ingredients for Roasted Vegetables

1 Eggplant
1 med yellow squash
1 zucchini
1 small onion
2 tbsp. Olive oil
1 tsp capers
1 clove garlic

Recipe Directions for Roasted Vegetables

  1. Chop or slice all veggies into bite size pieces

  2. Place in 9 x 13 baking dish

  3. drizzle w/ olive oil

  4. add 1/4 cup water

  5. add capers and garlic

  6. bake at 350 till tender
